Food for the Poor in Pocket


Today I thought I'd share this super cute picture of Aurora wearing sunglasses hehe AND a few quick and easy recipes for when you're basically just out of food and broke. Gotta love being an adult with bills to pay, right? haha BUT the good news is that even though these recipes are low on ingredients and cost, they're not low in good taste!

Teriyaki Stir Fry

1 bag Knorr's Asian Sides Teriyaki Noodles
1 1/2 c. water
2 T. vegetable oil
1 c. cabbage, chopped
8 baby carrots, grated

1. In a medium sauce pan, bring water and 1 tablespoon of the oil to a boil. Cook contents of noodle package according to directions.
2. While the noodles are cooking, put remaining oil in another medium sauce pan. Add cabbage and carrots and saute on medium high heat for 5 minutes.
3. Add noodle mixture to the pan holding the veggies and stir well. Remove from heat and enjoy.

Servings: About 2

White Chili Rice

1 can Hormel Cook-Off White Chicken Chili (other brands work great too, I'm sure... this is just what I had)
1 c. minute rice
1 c. water
shredded cheddar cheese, optional

1. In a medium sauce pan, bring water to a boil. Add minute rice and reduce heat, letting the rice simmer for about 5 minutes or until the water is gone.
2. Add chili and stir, heating for about 2 minutes more. Top with cheese if you'd like and enjoy.

Servings: 2-3

Chicken Enchilada Pasta
**Dan loved this one**

1 can Progresso Chicken Cheese Enchilada Flavor Soup
2 c. rigatoni pasta noodles
water
Shredded parmesan cheese

1. In a large sauce pan, bring water to a boil. Add noodles and cook about 10 minutes, stirring occasionally.
2. Drain noodles and place back in pan. Add soup and stir until all noodles are coated. Heat an additional 2 minutes on stove. Remove from heat, sprinkle with parmesan cheese and enjoy.

Servings: 4-5
