The Fifth of May

Tonight we celebrated Cinco de Mayo with my family. We've never celebrated it before (what is the holiday even for??), but my mom suggested it and we all thought it would be a fun, new tradition thing to start so we all brought a Mexican dish to share and had a grand old time!

I made Mexican Corn Salad because I wanted to bring Mexican Corn on the Cob that Dan's dad, Steve, had introduced us to but didn't want to have to deal with the cob. It turned out really yummy!

Becca brought Honey-Lime Chicken Enchiladas from the Six Sisters new cookbook and they were delish!

Steph brought strawberry shortcakes for our dessert and, boy, were they good!

Mom brought seven layer dip with chips and then she had a whole theme going to look like the Mexican flag including a veggie tray with snap peas, jicama, and red peppers; jello cups layered with green jello, cool-whip, and red jello; and then hard shelled tacos with tomatoes and lettuce. It was cute!

We also did activities: Erin, Dan, and Alex played catch in the backyard; everyone got addicted to a game called "2048" on their phones/kindles; and then (the main event!) we paper mached balloons to paint later for pinatas!

P.S. I think our baby has discovered her feet. It's definitely the cutest thing. SHE'S the cutest thing! ...Even when she poops out her diaper onto my side of the bed... haha yuck!

InstaTuesday #4

/This is where I spend my days at CVHS. Room 208./

/As we've discussed, I'm obsessed with Polyvore. This is what started that.../

/If you're familiar with the play, A Mid-Summer Night's Dream, then you know that it's all about mixed up love and it's just...silly. Well, my reading class gets a whole lot better when we read A Mid-Semester's Daydream (an adaption of the play mentioned before), and the students get to "profess their love" to each other. Especially when one character is a donkey mascot... haha. They loved it. They were recording themselves reading it and sending it to their mothers. I got a "What is your teacher having you read??" reply back to the recording of the few lines read in the picture haha/

/This one time, my Grandpa Smith bought a little motorcycle. Then he sold it to Dan and his brothers. It's so fun to ride!/

/Camping mistake #1: Giving this child a Monster Energy Drink. Good job, Dan and Ryan. haha JK he was all hyped up and hilarious./

/1st camping trip of the year! It was a balmy 20°F outside and the fire did NOT help but, boy, did we have fun!/

/Just hanging in the trailer with this guy. We could be models./

/I feel like, when I'm camping, I can eat whatever I want for breakfast. True story./

/I totally made dutch-oven potatoes for dinner on the camp trip and they were good. A few mistakes but I know what to change for next time to make them even better!/

/Study hall is so boring when I have no one to help and 90% of the students have gone to the lab. BUT I usually do get to hear all the gossip of the school in study hall (you know? drug busts, arrests, fights, ex-girlfriends, etc.) AND I get to hear all about Pokemon and computer games. I'm so lucky./

/Tonight, Dan fell asleep before me, but that's ok because even when he's dead asleep, he still reaches to hold my hand. You know it's true love when he isn't even aware he's doing it. It's these little moments that remind me how glad I am that he's all mine ♥/

InstaTuesday

So, ever since I got my new phone, I've been completely obsessed with Instagram. Seriously, it's a problem. Sooooooo, I figured I'd start doing "InstaTuesdays" so I can log them all, weekly, in one place! I'm excited!

/This is my first ever post on Instagram. I worked the 2A Basketball Championship games at SUU and it was PACKED!/

/Couldn't help but take a picture of this little cutie, Logan. I was able to babysit him for one of my old managers, Alicia, at the movie theater. He was so fun!/

/Soooo, this is what comes from having no food in the house, having your sisters stay with you two weekends in a row, and being a slob. 4 boxes of pizza and a box of wings. Yeah./

/3rd post in a row about food. I know. These are the snacks we take on road trips to St. George for date night/

/The other night, Dan was putting in a new shower-head for our guest bathroom and I tried to take a pic with him... I ended up in headlock. haha/

/After many days of snowy, overcast skies, I was glad to see that blue again./

/Basically, my brother-in-law's iguana is freaky. But you knew that.../

/We took our truck to Wet Willy's to be washed and vacuumed out. It looked like a brand new truck! haha BUT then today, it crapped out on us. Yeah, it better work again tomorrow or I might scream/

/I have the cutest nephew. No contest./

/I've decided that I have the best mom ever. I have short lunch periods at the high school so she had lunch all made for me when I got to her house. Homemade Chicken Taco Soup (yum!) and a homemade apple cake! Best!/

/Went pants shopping with my cute sister and ended up trying on random accessories and boots at Rue/

/Told ya we tried on boots!/

/I have a new cleaning schedule. It's keeping my house clean and I love it!/

/Found a new fave Netflix series! Parenthood! Watch it!/

/Played some basketball on our court finally! I had so much fun with Dan in the nice weather/

/We decided to try out the Duraflame logs since they were on sale... Yeah, they suck BUT it sure is cute and cozy to have a fire in our fireplace!/

/Melissa came to visit for a day! It was so fun! We made videos, sang, played with Becca's cat named Cat, ate ice cream, annoyed Dan with an overwhelming amount of girl (all the sisters including Christina stayed at my house), and laughed A LOT!/

/I took these beauties to church with me on Sunday. Be jealous!/

/Sunday with my cute sister, Collette. I think boys should ask her to the prom./

/My parents only had this vehicle for most of my life so excuse me if I have to remind myself every time I see it in the high school parking lot that they sold it!/

/I cannot get enough of this boy OR his freckles. I'm so lucky!/

/Yesterday we went on a quick and spur of the moment road trip to Monroe, Utah, to pick up blood from the Red Cross for Dan's courier business. It was fun to be together/

/I made up a game to pass off a wolf achievement for cub scouts tonight! We had fun! Thanks for helping me out, Cole!/
